Jodi Bieber urodziła urodziła się w 1966 roku, pochodzi z Johannesburga w Republice Południowej Afryki. Studiowała fotografię na warsztatach fotograficznych w Market Theatre pod okiem Davida Goldblatta. Zdobyła wiele prestiżowych nagród fotograficznych.

W 1993 roku zaczęła pracować jako asystentka fotografów, m.in. Kena Oosterbroeka, w redakcji dziennika "Star". Szybko zaczęła sama robić zdjęcia i była za nie wielokrotnie nagradzana. Relacjonowała wybory parlamentarne w RPA w 1994 roku oraz zamieszki i przebieg pierwszych demokratycznych wyborów w RPA.

W 1996 roku wyjechała na World Press Masterclass do Amsterdamu. Przez kolejne 10 lat pracowała jako freelancerka dla największych gazet i magazynów. W latach 1994–2004 fotografowała włównie w RPA, młodzież żyjącą na obrzeżach południowoafrykańskiego społeczeństwa. Praca ta doprowadziła do powstania książki" Between Dogs and Wolves – Growing up with South Africa" opublikowanej i wydanej w pięciu krajach w 2006 roku.

W 2011 roku wykonane przez Jodi Bieber zdjęcie 18-letniej Afganki Aishy, która została ukarana przez męża za ucieczkę z domu obcięciem uszu i nosa, wygrało konkurs World Press Photo. Już wcześniej ta wykonana przez Bieber fotografia wstrząsnęła całym światem - gdy znalazła się na okładce "Time". Postanowiono pomóc dziewczynie. Bibi Aisha przeszła operację plastyczną w Stanach Zjednoczonych, gdzie obecnie mieszka.

Prace Jodi Bieber są prezentowane na międzynarodowych wystawach indywidualnych i zbiorowych. Zrealizowała kilka projektów fotograficznych Soweto z 2010 roku oraz Real Beauty z 2014 roku. Reprezentowana jest przez The Goodman Gallery.

Fotoreporterka jest związana ze skupiającym fotografów Institute for Artist Management. Pracuje również dla organizacji non profit, m.in. Lekarzy bez Granic, Positive Lives, Amnesty International.

Do 2001 roku już siedmiokrotnie zdobywała nagrody w World Press Photo, jest także laureatką Prix de le l’Union Europeene na Recontres de Bamako Biennale Africaine de la Photographie, Pictures of The Year International, zdobyła także wiele innych wyróżnień.

W 2016 roku była przewodniczącą jury w konkursie Grand Press Photo 2012
